A desire to create fun and delicious desserts for her family has led one Helston woman to give up her job and start a thriving new business.
Lindsey Hibbert was looking to bake something different for dessert for her family one evening and came up with an unusual idea – a tempura battered cake loaded with yummy fillings, toppings, sauce and ice cream. It was an instant hit.
“I began creating other mouth-watering desserts which my children loved and when their friends said the same, I realised that I had something a little different from the norm.“

As the cakes popularity grew, Lindsey decided to leave her job as an estate agent to cope with the growing demand and worked on creating decadent desserts such as Lemon Meringue Pie, Rocky Road and a Cornish Cream Tea – all based on a home-made vanilla sponge cake battered in a light tempura and filled with delicious fillings.
For those with a savoury leaning, Lindsey has also created a rustic crushed potato cake with a tempura shell, served with a combination butchers bacon, sausage, beans, caramelised onions and cheese and finished with fresh chives and cherry tomatoes.
Lindsey and her small team now work as outside caterers and street vendors at a range of festivals and events. To ensure her professionalism is recognised, she has joined the Nationwide Caterers Association (NCASS) and completed food hygiene courses.
